UAV:
Press "R" to go up
Press "F" to go down.
UAV controls are intuitive. Move mouse up to move it up. Move mouse down to move it down.
Chopper:
Hold "W" to get the engine going
Move mouse up to point the nose down and vice versa.
When turning, it helps to use the arrow keys also to make sharper turns.
In a chopper, do not use the mouse at all. Fly with the WSAD and the Arrow Keys. Once you get the overall feel for it, you can practice flying holding patterns, i.e., continually flying in a loop so that your door gunner can light people up. After that, you can focus on hovering by pressing alternating keys; it's only really useful in certain situations if you're in an attack helicopter.
You can use the mouse in a chopper, you just gotta have one that lets you adjust the sensitivity. I have the Logitech G5 that lets me crank up to 5600dpi on the go, so that's how I rock it. But you gotta practice mostly. The thing that sucks is you have to reverse the mouse pitch to fly the helos and keep it normal for the UAV. No idea why that is.

The first step to flying is realizing you are not in a helicopter but a coffin, act accordingly.
And how do you do in flight repair. I know people are not landing to do repairs but are staying in the air forever.
If you're an Engineer, go into the back of the chopper and use your repair tool. Weirdly, the drill only works on one exact place; sometimes the floor sometimes the wall etc so just fire up the drill and spin around the chopper until you see sparks and here the sound, then focus on that point to repair. Be careful though because in the back you're pretty open to sniper, MG and RPG fire. If they get a hit on the side of the chopper with a RPG or M2 chances are you'll be killed instantly. Unfortunately any medic or ammo crates dropped in the chopper fall through the floor.
